Banana bread is the first recipe I learned to make as a kid! Over the years, I've tried several different recipes and this one seems to work best. I add walnuts in for flavor and a crunchy texture. Although it takes a bit of time to make, the bread comes out really moist, and your kitchen will smell heavenly!

What You'll Need
4 ripe bananas
1 cup white flour
1 cup whole wheat flour
1 flaxseed egg (1 tablespoon water + 3 tablespoons of ground flaxseed
1/2 tsp salt
1/2 cup butter
1/4 cup brown sugar
1/2 cup white sugar
1/2 tsp baking soda
1 tsp baking powder
1 tsp vanilla extract
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/8 tsp ground cloves
1/2 cup walnuts (save some for topping)
Cooking Instructions
Preheat your oven to 350 degrees. Using cooking spray, or oil, lightly grease an 8in x 4in baking pan. If you want to use parchment paper, just make sure you oil the paper after placing it into the pan.
Mix your flaxseed and water to make a flax egg. Sit aside for 5 minutes.
Soften butter and cream together butter and sugars (either by hand or with an electric mixer).
Add flax egg to butter and sugar mixture.
Mash bananas using a fork. Add bananas and vanilla into wet mixture.
Mix together both flours, salt, baking soda, baking powder and spices. When adding in the nutmeg, ground cloves, and cinnamon, you can use your own judgement. Some might prefer more cinnamon to nutmeg, etc.
Add dry mixture into wet mixture. Stir until just combined. Do not over mix.
Add in a the walnuts. You can use a sandwich bag and a rolling pin to crush them up into smaller pieces.
Add the batter into the pan. Sprinkle some of the walnuts on top of the batter.
Bake for 60 to 70 minutes. The baking time will vary based on your oven. Check on the bread after 40 minutes.
Let the bread cool for 5-10 minutes before serving.
You can store the bread in a bread box for 4 days or in the fridge for 4 days.
Tips!
If you do not have whole wheat flour, you can use white flour for recipe instead. Start with a 1:1 ratio when using the white flour (2 cups total instead of one). If you need to add more flour you can.
For even more banana flavor, you can include a few pieces of chopped banana into your batter.
This recipe works with a shallow pan as well (8in x 8in). Just know that bread will come out thinner.
