A veggie hash is a great go-to for breakfast (or brunch). This is a great dish to make in bulk and eat for a few days. You can easily make it with ingredients you have leftover in your fridge from making stir fry or another dish. There are a lot of different ways to make this dish your own as well!

What You'll Need
1 tablespoon of olive oil (more if needed)
1 yellow onion
1-2 cloves of garlic
2 lbs of potatoes (I use a mixture of red and yukon)
1/2 red bell pepper
1/2 yellow bell pepper
1 cup fresh spinach (chopped)
1/4 cup finely chopped cilantro
1 teaspoon paprika
2 teaspoons of cumin
2 teaspoons of chili powder
pinch of cayenne pepper (add more if you want a spicy dish!)
salt and pepper to taste
Cooking Instructions
Begin by chopping your onion (diced), garlic (minced), bell peppers, potatoes (diced), and spinach (chopped). For the potatoes, you can choose to leave the skin on or peel the potatoes.
Heat your oil in a skillet on medium heat.
Add the onions to the pan.
Once the onions are translucent, add the minced garlic to the pan. Make sure you do not burn the garlic. You may want to turn the heat to medium low.
Add in your potatoes. You want to brown them a bit before you add in your spices to prevent burning your seasoning.
Add in your seasoning and keep your temperature at medium heat for 10 minutes. Check on the potatoes occasionally and stir everything to prevent them from burning or sticking to the pan.
After 10 minutes are up, reduce the heat to medium low.
Once the potatoes are soft enough to poke with a fork (easily), add in your spinach and cilantro.
Stir. Let the spinach wilt (this should take about 2-3 minutes).
Serve! Store in an airtight container in the fridge for up to 4 days.
Tips!
You can top the hash with sliced avocado for added flavor/texture.
One way to make this recipe your own is to experiment with different spice blends. You can add in more spice or omit the cayenne altogether.
You can add in a vegan sausage for this recipe as well. When looking for a vegan meat, I would recommend the pre-packaged brands over the frozen options. Field Roast makes several sausages and Upton's Natural's makes a phenomenal chorizo sausage! Enjoy.
