Featured Recipe: Vegan Sugar Cookies

I love sugar cookies! One of my favorite childhood memories is of making Betty Crocker's sugar cookies for Christmas. I was thrilled to learn about the vegan version of my favorite sugar cookie. The recipe is really easy to follow and makes a bunch of cookies. Check out the recipe here on their blog.

Vegan Tip:

This particular recipe relies on powdered sugar to give the cookies a soft, pillowy texture. Make sure you beat the butter first before adding in the powdered sugar. Also, less is more with almond extract. The extract gives the cookies their flavor but you have to be careful and make sure you do not add in too much!
