This is a quick and simple tofu scramble recipe. Tofu scramble is a go-to breakfast choice of mine. You can easily use any ingredients that you have in your fridge from another meal. You can also get creative with different veggie and meat combinations!

What You'll Need
14 oz of tofu (Extra Firm or Firm will do)
1-2 tablespoons of olive oil
1 white or yellow onion
2 cloves of garlic
1-2 cups of uncooked broccoli (florets)
2 large tomatoes
2 handfuls of baby spinach
Vegan sausage (optional: unseasoned, chorizo, or apple sausage will do)
1-2 teaspoons of turmeric
2 teaspoons of cumin
2 teaspoons of chili powder
Pinch of cayenne (add more if you want a spicy dish!)
Salt and pepper to taste
Cooking Instructions
Before you begin, remove tofu from the container. Place the tofu on place (put a paper towel underneath) and use a heavy pan to drain the tofu of all excess water/liquid.
While the tofu is draining, begin chopping your onion (diced), garlic (minced), broccoli (florets), tomatoes (diced), and spinach (chopped).
Prepare a large skillet with the 1-2 tablespoons of olive oil. Add the onions to the pan.
Once the onions are translucent, add the minced garlic to the pan.
Once the garlic begins to brown (not burn!), add the broccoli florets and diced tomatoes to the pan. Let every cook for about 1 minute.
At this point, if you want to add sausage you can. For a better texture, feel free to "blitz" the sausage in a food processor prior to adding it to the skillet.
Using your hands, transfer the tofu into a medium-sized bowl. Since you want a "scrambled egg" effect here, you will use your hands to crumble the tofu into the bowl. After the tofu is crumbled, you can add all of the spices (cumin, cayenne, chili powder, salt and pepper).
Transfer the tofu to the pan and cook for about 5 minutes. Once everything is sautéed together well, you can add the chopped spinach!
Best when served hot. You can store this meal in an airtight container in the fridge for 4 days.
Tips!
Tofu scramble is a great dish because you can use anything you have left over in your fridge (peppers, onion, vegan meats, broccoli, spinach, etc.) and the recipe does not take too long to cook.
One way to make this recipe your own is to add you own mixture of spices. I went for a spicier taste but you could use a milder blend of spices!
When looking for a vegan meat, I would recommend the pre-packaged brands over the frozen options. Field Roast makes several sausages and Upton's Natural's makes a phenomenal chorizo sausage! Enjoy.
