Pesto is a versatile option if you want to add a spread to a sandwich, or whip up a quick veggie pasta. For this recipe, you will only need a few ingredients.
What You'll Need
1/2 to 1 cup fresh basil
1/2 tomato (diced)
1/4 cup walnuts or pine nuts
1 tablespoon vegan parmesan (I use Follow Your Heart Shredded Vegan Parmesan)
1-2 tablespoons of olive oil
1 teaspoon lemon juice
1/2 teaspoon sea salt
Instructions
Starting with the basil, add all of your ingredients into a food processor or container for an immersion blender.
You want the mixture to be really smooth! As you start to blend the ingredients, the overall color should become bright green.
Add in more sea salt, lemon juice, or olive oil to taste.
Store in an airtight container for up to 3 days.
Tips!
Less is more with olive oil. You want to make sure you do not add in too much or your pesto will be too oily in texture and taste.
You can experiment with different alternatives! For example, you could use sun-dried tomatoes instead of diced tomatoes.
Pine nuts will give your pesto a slightly creamier consistency than the walnut version. The taste will vary slightly as well.
