Pesto

Pesto is a versatile option if you want to add a spread to a sandwich, or whip up a quick veggie pasta. For this recipe, you will only need a few ingredients.


What You'll Need

  • 1/2 to 1 cup fresh basil

  • 1/2 tomato (diced)

  • 1/4 cup walnuts or pine nuts

  • 1 tablespoon vegan parmesan (I use Follow Your Heart Shredded Vegan Parmesan)

  • 1-2 tablespoons of olive oil

  • 1 teaspoon lemon juice

  • 1/2 teaspoon sea salt

Instructions

  • Starting with the basil, add all of your ingredients into a food processor or container for an immersion blender.

  • You want the mixture to be really smooth! As you start to blend the ingredients, the overall color should become bright green.

  • Add in more sea salt, lemon juice, or olive oil to taste.

  • Store in an airtight container for up to 3 days.


Tips!

  • Less is more with olive oil. You want to make sure you do not add in too much or your pesto will be too oily in texture and taste.

  • You can experiment with different alternatives! For example, you could use sun-dried tomatoes instead of diced tomatoes.

  • Pine nuts will give your pesto a slightly creamier consistency than the walnut version. The taste will vary slightly as well.
