Quick & Easy Eats: Nachos

This is a simple nacho recipe. Easy to put together. You can get creative with your toppings! Nachos are a quick option when you only have 15-30 minutes to make a delicious meal.


Vegan nachos


Prep Time: 10 minutes

Cook Time: 20 minutes

Servings: 3-4 people


What You'll Need

  • 1 tag of tortilla chips

  • Vegan meat crumbles (I use Trader Joe's Soy Chorizo but you can use any ground vegan meat crumble.

  • 1 8oz bag of vegan cheddar (I use Violife Mexican Style Cheese Blend but you can use any vegan cheese brand).

  • 1 tablespoon of neutral oil

  • 1 can of black beans

  • 2 tomatoes (diced)

  • 3 green onion stalks (chopped)

  • 1/4 cup of cilantro (finely chopped)

  • 1 small can of olives (optional)

Cooking Instructions

  1. Pre-heat your oven to 400 degrees. You will need a 9 in x 9 in pan (a 8 in pan works as well).

  2. On medium heat, add oil to a skillet and cook vegan crumbles until brown.

  3. Heat up your black beans. You can use the microwave for 45 seconds or heat them in a small sauce pan on the stove. Set aside.

  4. Chop your tomatoes, green onion, and cilantro. Set aside.

  5. Begin assembling your nachos in your pan. Start with a layer of chips. Add in the crumbles, beans, and cheese. Repeat once more.

  6. For the last layer, add tomatoes, cilantro, green onions, and olives (optional).

  7. Place the pan in the oven and cook for 10 minutes. You want the cheese to melt but you want to make sure you do not over cook the rest of the nachos.

  8. Best when served hot. You can store this meal in an airtight container in the fridge for 3 days.



Tips!

  1. There are several ways to get creative with nachos. You could add jalapenos, olives, spicy crumbles, or even make your own refried beans!

  2. Instead of cooking the green onions and cilantro, you can add them in after baking the nachos.

  3. Getting vegan cheese to melt can be tricky! You can also try different vegan cheese brands to see which one you prefer. Follow Your Heart, and Chao by Field Roast are other brands that make really good vegan cheeses and cheese blends!
