Quick & Easy Eats: Teriyaki Chickpeas

Chickpeas are a great source of protein and pretty easy to prepare! This recipe is for a teriyaki chickpea base you can use in your stir-fry, rice, or noodle dish. You can add any veggies you like and easily double the recipe for your meal prep for the week!

Prep Time: 5 minutes
Cook Time: 15 minutes
Servings: 2-4 people
What You'll Need
1 15oz can of chickpeas
2 tablespoons of soy sauce
1 teaspoon of cornstarch
1/4 cup of water
2 teaspoons of ground or fresh ginger
2 teaspoons of garlic powder
1 teaspoon of agave or brown sugar
1 tablespoon of a neutral oil (i.e., canola oil)
Cooking Instructions
Prepare a large skillet with canola oil.
Drain and rise chickpeas (optional: keep leftover aquafaba chickpea water)
Add the chickpeas to the skillet. Cook for at least 5 minutes.
Add soy sauce, water, cornstarch, ginger, agave, and brown sugar to a small bowl. Stir to combine and dissolve the cornstarch.
Add your sauce to the skillet with the chickpeas.
Cook for about 10 minutes. You should see the sauce begin to thicken. Check your temperature often to make sure you don't burn the sauce.
Remove your chickpeas from the skillet. You can either serve them immediately with your favorite rice, noodles, or store in an airtight container in the fridge for 4-5 days.
Tips!
You can double this recipe to make lunch/dinner for the week.
You can opt to cook the chickpeas in the oven at 400 degrees for 15 minutes and then toss in your sauce.
